Cold brew and iced coffee are often confused but actually two completely different drinks. The key difference is in the extraction process - Cold Brew is brewed cold (shocker), whilst iced coffee is brewed hot but then cooled down. Similar, cold brew tea is tea that is brewed in cold water rather than hot - the process alters the taste profile as cold water extracts a different chemical balance from the tea than you'd get from hot water.
