This seasonal tea from the Aislaby Tea Estate in Sri Lanka’s Uva district takes black tea to another level! Hot days, cold nights and strong winds combine to stress the bush and build flavour, while the oxidation process is minimised to result in a black tea with a number of green tea characteristics - it's deeply aromatic with complex flavours, including intriguing notes of wintergreen. It's one of our favourite black teas.
Food pairing: Sweet and lightly spiced food, Continental breakfast, English breakfast, also great in the afternoon on its own or with cake.
Brewing instructions: Best without milk, or just a dash. 1-2 teaspoons of loose leaf or 1 pyramid bag. 2-3 mins at 90-95ºC without milk, 4-5mins at 95-100ºC with milk. Just turn your kettle off before boiling if you don't have a temperature controlled kettle.
