Costa Rica Las Lajas Coffee

Last year, Surf Shop got hooked on the specific flavour profile that comes from naturally processed coffees. Ever since, they've been looking for a green coffee that exhibits such a profile to add to their seasonal lineup. When they first cupped LAS LAJAS PERLA NEGRA, they realised exactly what they were looking for.

Las Lajas is located at 1600 metres above sea level in the foothills of the Poás volcano, which is in prime specialty coffee country in the Sabanilla de Alajuela region of Costa Rica’s Central Valley. This lush, fertile area is characterised by heavy and regular rainfall for 150 days of the year. The farm produces primarily Caturra and Catuaí varietals, which is grown in the shade of native trees, but also has small plots of Sl-28, Villa Sarchi, Red Bourbon and Obata. Organic composts are produced on site using worm composting. In fact, the production process is entirely free of chemicals and agro-toxins. Chacón Solano Family’s Las Lajas also has its own micromill, which, in addition to processing all of the Las Lajas coffees, also processes coffees from the surrounding region.

Finca Las Lajas were the very first producers in Costa Rica to have natural coffees. In 2008, a huge earthquake hit Costa Rica. For a week, the farm had no water and no electricity, all of which happened right in the middle of the harvest. The pickers needed to continue working and harvesting the coffee. A quick decision was made to proceed in the African style. Rather surprisingly, the coffee ended up having an amazing profile, after which it was realised it had great potential.

Nowadays the process has changed a lot. Instead of just harvesting and throwing coffee into the bags, the cherries are handpicked. The “floaters” technique in the tanks is then used, before the coffee is then moved to beds to dry.
