This decaf. process was developed by Kurt Zosel using liquid CO2 in place of chemical solvents. It acts selectively on the caffeine molecules, i.e. It releases the alkaloid but retains the coffee flavours. In the Santa Amellia Xalapa region, coffee farming marks a new direction for the community who with support from a Spanish organization have begun to use the natural resources of fertile soils & high altitude to bring specialty coffee to the markets.
'Small Producers Jalapa' became a formal association in February 2017 with the help of our importers, 'Third Wave Coffee Source' & will hope to have their first wet mill in 2019.
