Colombia Anselmo Coffee
Anselmo is the first Tabi through our doors here at Old Spike.
Tabi is hybrid variety developed by the Federación Nacional de Cafeteros (the Colombian national federation of coffee) in 2002 after 25 years of research. The Tabi variety came about in a bid to grow a coffee that is resistant to coffee leaf rust whilst maintaining the high quality of its bourbon and typica parents.
Anselmo, grown by Anselmo Trujillo at Finca Paraiso, was carefully hand-picked in order to use only the ripest cherries. Then exposed to a dry anaerobic fermentation of 40 hours before pulped inside grainpro bags at 20 celsius. Afterwards it was pulped, washed and dried on raised beds to the ideal moisture content.
An intensely sweet cup with bright notes of strawberry juice and a long lasting lemon and panela finish.
