Aceh Gayo Wet Hulled Coffee

Indonesian coffees have a lot of flavour and intensity, sweet spices, dried fruits, flowers and plums. This lot from the Central Aceh District on the island of Sumatra, is very floral and complex, with very low acidity and a medium body which make it suitable for both espresso and filter brews. Medium roasted. A note about Indonesian Wet-hulled coffee Drying coffee beans in the intense humidity of the country can be a problem. In a warm climate, it takes at least 2-3 weeks to dry an average coffee. In most parts of Indonesia, where rainfall and humidity are high, it would take far longer. Bacteria would cause coffee defects long before the beans would be at a low enough moisture content to dry. Therefore, in Indonesia, coffee is hulled when the parchment is still with a 20-24% moisture content and then dried without the husk until it reaches 12-13% . Basically, wet hulling removes the parchment so the sun and heat can directly penetrate the bean, therefore allowing it to dry 2-3 times quicker.
