The journey coffee takes from cherry on a tree to ready-to-roast bean is called processing, and it massively defines what the final cup will taste like. For most of history, coffee was processed in the same way – but over the last 10 years, processing has become one of the biggest areas of innovation in coffee.

The newest method we have seen is called the ‘pillow natural.’ This process is when there is a container of coffee and, above that, there is a bag which is filled with water, called the water pillow. This creates a seal and an anaerobic environment for the coffee, as well as absorbing the heat created in fermentation. This creates an incredibly unique, fruity, and tropical coffee.

The Villamaría group is five farmers living in the municipality that shares the group's name. This lot was processed at a nearby mill called Jamaica, not far from the farms in Chinchiná. The station currently represents the harvests of 30 to 50 coffee-producing families in the surrounding area.

Jamaica sits at a lower altitude of 1300 MASL, making it better suited to the processing of honey and natural coffees. This is due to the hotter temperatures, which help the producers induce the fermentations that create the intense, fruity notes in the coffee.
