This is a specialty coffee from the Cyato washing station in Rwanda. This is a specialty coffee from the Cyato washing station in Rwanda. Built in 2017, is located in Nyamasheke, near Lake Kivu and the Nyungwe Nature Park, in the Western Province of Rwanda. The lake contributes to the cool and constant climate, with average temperatures of 22 to 25 degrees Celsius. The producers in the area are small coffee plantations owned by families that they intersperse with other agricultural products. They also raise goats and chickens which they use as fertiliser.
In keeping with this traditional agriculture. They do not use chemical fertilisers or pesticides. Rely on wild bees to help pollinate the coffee trees. Harvesting is done manually. After pulping, cherries are left to ferment for 12 to 24 hours before being washed in clean water. Then the parchment is transferred to raised beds for the drying, which takes between 10 and 20 days.
