Ethiopia Banko Gothigi Coffee

Most of Ethiopia's producers are small independent farmers. Most of them continue to grow coffee with traditional methods. As a result, most of the coffee is grown without chemical fertilizers or pesticides. Coffee is grown, harvested and dried almost entirely by manual systems.
In this particular lot, the farmers handpick the cherries. They are delivered to the Banko Gothigi Ethiopia washing station. Employees sort incoming cherries by hand to remove unripe or damaged cherries. The cherries are then layered on raised beds to dry for approximately 21 days. The station has 89 drying beds and each one is marked with a code. This system simplifies the tracking of traceability and the status of the processing.
