Extensive roast, high front up heat with constant energy input to ensure proper bean development to fruit and berry acidity whilst enhancing the already superior sweetness. The story of Eugene Altieri and his coffee production has its origin at the start of the 2nd Millennium.
Presently, Eugene has also involved several family members in the coffee production processing and post-production work.
The farms are located in Boquete and is one of the most internationally recognized lands in the world of growing coffee when looking for the ultimate quality. The Callejón Seco farm grows varieties such as Typica, Catuai and Geisha. Regardless the variety, attention to detail is high. The farm is on a property of 45 hectares, located on the slopes of the Barú Volcano with an impressive altitude ranging between 1,700 to 2,200 meters above sea level. The farm is within the National Park, a beautiful natural conservation area, surrounded by a cloud forest that empowers the coffee with its unique and special flavor.
Picking and collection of coffee cherries is performed by hand enabling the picking team to select only ripe fruits. This thorough selection process ensures the grains that are just ripe propels a guarantee the best quality. The cherries are de-pulped and patched through to a conventional washed fermentation process.
