This coffee is another crowd-pleasing natural coffee from our long-standing, direct-trade partners in Honduras, the Mierisch family. In 2011 the Mierisch family started the project of revitalising Finca Cerro Azul in the region of the National Park Azul Meambar in Siguatepeque, Comayagua, which has demonstrated great quality results, including this extraordinary coffee, Aguacate. The natural process behind this coffee begins with picking only the ripest cherries from the tree. The Mierisch family then everything thats under-ripe, a crucial step that would hinder the coffee’s quality. The coffee is finally moved to raised beds in a greenhouse and dried for 27 days until it reached a humidity of 11%. The resulting coffee has a structured body and toffee-like finish.
